Find yourself a large festive platter, dress it with a bed of tasty arugula drizzled with lemon and you are on your way. A turkey appetizer that can’t be beat!
1lb. of turkey or chicken sausage, cooked and cubed
1lb. of grape tomatoes, rinsed
1lb. of red or green grapes, rinsed
1lb. of mozzarella or aged cheddar, cubed
Fresh basil leaves
Extra Virgin Olive Oil
Cook a ring of thin Italian turkey or chicken sausage in a skillet with about 2 tsp. of olive oil, until crisp. Then cut into bite size pieces and place on a platter with paper towels to absorb any grease.
Now take a toothpick and assemble your appetizer. First a tomato, then add the sausage, basil leaf, cheese and last the grape. Continue this method until you have enough for your guests.
Place the toothpicks on the bed of dressed arugula and add oil and vinegar when ready to serve.
Always remember, the type of cheese can be dictated by your taste and dietary needs. But try and go to the butcher to get a great quality of sausage, it will make a difference your guests will truly appreciate. Eat up and enjoy!
